Creamy Cilantro Lime Pasta Salad
If someone were to ask me what my favorite pasta salad is, it’s definitely this creamy cilantro lime pasta salad.
It’s packed with nutrients from all these different fresh ingredients that go so well together: cilantro, red onion, crisp cucumber, corn, and a bunch of queso fresco all tossed in the best homemade smoky lime dressing.
It is so good and it only takes a few ingredients to make.
🌿 Ingredients for Cilantro Lime Pasta Salad
You’ll need:
- Fresh cilantro
- Garlic powder
- Chipotle chili pepper seasoning
- Mayo
- Plain Greek yogurt
- Lime
Add all of these ingredients to a large bowl.
Add the chipotle chili powder, garlic powder, and salt.
Use about half a bunch of cilantro for this. Chop it up and put 2 tablespoons into the dressing bowl. The rest you’ll mix into the pasta salad later.
Now add the lime zest and lime juice.
Stir everything until it’s all mixed together really well. Set the bowl in the fridge until you’re ready to use it.
🍝 Cook the Pasta
- Bring a large pot of water to a boil and add the pasta.
- While that’s cooking you can chop the fresh ingredients.
- Once the pasta is done cooking, drain it and run cold water over it, then drain it well.
🌽 Add the Fresh Ingredients
If I have the extra time I love to use roasted corn in this recipe.
It takes about two ears of corn to make the cup, but if you don’t have the time a can of corn is just fine.
If I do use canned corn, I like to look for the vacuum sealed cans because it retains the crispness of the corn slightly better than just a regular can.
Now take out the bowl of dressing and add the drained pasta.
Next add:
- Corn
- Cucumber
- Diced red onion
- Queso fresco
- Cilantro
If you can’t find queso fresco, you can use Parmesan cheese or cotija cheese.
🥑 Add the Avocado Last
Gently mix everything until it’s all well combined with the dressing.
Don’t forget about the avocado, but those are best added last right before you’re about to serve it so that they don’t turn brown.
