Roasted Salsa Verde Recipe
Today I’m going to show you how to make my favorite roasted salsa verde.
We’re going to start with about 10 to 12 tomatillos which look just like regular tomatoes but they’re green and they have a papery husk on the outside.
You’ll want to start with removing the husk off each one of them.
As you’re removing the husk, gently twist the top and the stem should also pop off.
Once all the husks have been removed, it’s time to wash them. Gently scrub each tomatillo and rinse them off well.
This is how they look all cleaned up, super bright and green.
🌶️ Prepare the Jalapeno and Serrano Peppers
Now it’s time to clean the jalapeno and serrano peppers the same way.
Slice each pepper and remove all the seeds and insides. This is because I want my salsa to be very mild.
If you like your salsa spicy, you can definitely leave these in and roast the peppers whole.
I actually like it spicy myself, but my daughter does not and she loves salsa, so I like to make it how she likes it so she can eat it too.
🔥 Roast the Tomatillos and Peppers
Once the peppers are ready, lay those along with the tomatillos on a baking sheet lined with aluminum foil.
Put them in the oven with the broiler set on high for about 4 to 5 minutes. They should have a good char on them.
Now flip them all over and broil them on high for another 2 to 3 minutes.
While those are in the oven, get your onion and cilantro ready.

Keep an eye on your tomatillos in the oven.
You want them to get a good char and turn less bright green, but you don’t want them to pop and explode too much.
🥣 Blend the Salsa Verde
Once those are done, add them to the blender.
Add the peppers on top and pulse that a little bit to make room for the rest of the ingredients.
Next, add the cilantro, garlic, cumin, salt, and lime juice. Blend that just a little bit to make some more room.
Last, add the onion.
I like using red onion because I like the flavor, but it will change the color of your salsa.
It won’t be quite as bright green. If that matters to you, stick with a white onion.
🥑 Fresh Roasted Salsa Verde
Here it is freshly made and here it is after it’s been in the fridge for a little bit so you can see how the color changed because of the onion.
It tastes absolutely amazing though.
Have it with some chips or make some salsa verde pasta.
However you choose to use it, I’m sure it will be your new favorite.
