Mexican White Spaghetti
Today we’re Talking About Mexican white spaghetti or ESP spaghetti Blanco and I’m sharing a super easy recipe today that I love so much because it has so much flavor.
White spaghetti otherwise known as ESP spaghetti Blanco is a classic Mexican dish with spaghetti noodles tossed in a really delicious creamy white sauce and it doesn’t take that many ingredients.
🧄 Ingredients for Mexican White Spaghetti
We’ll need:
- Spaghetti
- Garlic
- Mexican cream
- Bay leaves
- Butter
- Queso fresco
🍜 Cook the Spaghetti Noodles
Bring a large pot of water to a boil and add your noodles.
While those cook you’re going to add some butter and garlic to either a medium or large size skillet and cook that over medium to medium low heat until the butter is fully melted and the garlic is fragrant.
Stir it frequently to make sure that the butter and garlic doesn’t burn.
🥣 Make the Creamy White Sauce
Once the butter is fully melted we’re going to turn the heat down to low and add our cream and a little bit of salt.
Now gently stir or whisk together the cream and the butter mix.
Don’t be worried if it looks a little separated. Just trust the process and keep stirring and whisking it together.
🌿 Bay Leaves for Flavor
Once the butter and cream are mixed well lay about 7 to 8 bay leaves on top of the sauce.
Give it a gentle stir to mix the leaves into the rest of the sauce.
Now let this sauce simmer for about 10 minutes on low stirring occasionally.
This gives the bay leaf some time to really infuse this sauce with flavor.
This is actually how my mother-in-law makes this recipe and I love the flavor the bay leaves add.
🧀 Add the Queso Fresco
Once the noodles are done drain them and return them to the pot.
When the sauce is done simmering don’t forget to take out the bay leaves with a spoon.
They add lots of flavor to the dish but they’re not the most pleasant to eat.
Pour the sauce over the spaghetti noodles and gently stir.
The sauce is usually on the thicker side so if you’re having trouble stirring just add a splash of milk.
Take about half a block of queso fresco and crumble it up. Once it’s all crumbled add it to the pot of spaghetti and gently stir again.
If you’re ever having trouble stirring the pasta just add a splash of milk.

Once it’s all combined it’s ready to enjoy.
You can either eat the spaghetti on its own or pair it with your favorite meat like steak or breaded chicken.
